Christi Hodgson 10/08/2021 6:23 AMDuring the ecochallenge, I am reflecting on the politics of our local food system. Unfortunately our local cooperative grocery store was no longer financially viable. Thankfully, a small family business in our neighbourhood is investing to save that location. It will maintain the same accounts that the coop had with local farmers and prevent a food dessert (lack of access to fresh food) in that region. -
REFLECTION QUESTIONFoodIf you were to only eat what is in season locally from now on, what would be the most difficult food item for you to give up? Why?
Christi Hodgson 10/08/2021 6:21 AMIf I could only bring a few seeds onto an island I would bring the apple seed. It brings me joy and health. My own baby apple tree gave us 7 apples for the first time this year. -

I am equally proud to work for a company that values and promotes participation in this initiative. Even though I am able to check "already doing this" for some of the actions, there are so many challenges left to try! -
REFLECTION QUESTIONFoodIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?
Christi Hodgson 10/06/2021 12:57 PMComposting at home is becoming easier the more I practice. putting the proper wire mesh on the bottom of the outdoor bin has really made a difference in deterring the critters.-
Hannah Kliphan 10/08/2021 4:00 AMComposting is great. If you want to get a little extra life out of your veggie scraps you can also make veggie broth before you toss the scraps in the compost bin. I put onion, carrot, and celery scraps in a jar in the freezer then make a big batch of broth when the jar is full. The strained scraps then go in to compost.

REFLECTION QUESTIONWasteWhat one thing could you do right away to reduce your waste?
Christi Hodgson 10/06/2021 12:54 PMMy kids are hounds for pre-packaged granola bars at lunch and I do cave and buy them as a treat. we have set the expectation that the wrappers come home with all the re-usable containers in the lunch-box. Now if only I could remember to take them out of the pockets before laundry!
