    I went through the fridge last night, organized and cooked several different vegetables that needed to be used. Now that they are prepped and ready to go, I will be much more likely to eat them

    I’m really noticing how much food my household wastes! Some of it is due to my child throwing food on the floor or asking for something then not eating it, and some waste is from losing things in the back of the fridge or not using things before they go bad. I definitely want to work on it and waste less food.

    My child really loves berries! Next year I’d like to harvest more ourselves and freeze them. 
    we also eat bananas almost every day. They are a easy snack and we use them in smoothies and oatmeal. I’ve been experimenting with adding local fruit instead like apples and pears.

    I’m becoming more conscious of my footprint in many aspects of my life. When my daughter needed some new winter items the other day, I went to a resale shop instead of buying new. I’ve also been driving less and making sure to carpool!

    It’s going well! The challenge is motivating me to do some actions that I’ve been meaning to do for a while now, like purchase carbon offsets, eat less meat, research the most effective organizations to donate to and email some local businesses about providing more eco friendly packaging options.

    Why do people in richer countries eat more meat than people in other places? How does eating more meat affect our planet and other people?

    Meat is expensive in comparison to many plant foods. Subsidies in the USA make the cost of meat artificially lower for consumers. Raising animals for meat requires a lot more energy per calorie than growing and consuming plant foods directly.

    Today I made a quinoa chicken soup using meat from a whole organic chicken, locally grown vegetables and broth made from stewing the chicken. I always eat the organs that are included with the chicken. I froze some extra broth and meat. It feels good to use the chicken to make multiple meals and to use all parts of it. Soup is also a good way to make less meat go further.

    Eating a healthy diet is a great way to prevent health issues, and it is true that prevention is the best medicine!
