    Personally, I have seen a lot of health benefits from adding more fruits and veggies and reducing the amount of meat I consume! I found that it has helped my gut health tremendously, allowing me to feel less bloated and more healthy throughout the week!

    Spending the weekend enjoying the local farmers markets while they are still here! By the way, the last weekend of farmers market isn't until Halloween this year! YAY! Also-if you have an EBT card, the farmers market team will match up to 20$!! So, you pay 20 and they give you an additional 20! :)

    I attended the Orenco Station farmers market this morning and got a ton of fresh produce! Most of it is still sitting in the fridge getting ready to use for the rest of the week, but my partner and I made Potato Leek soup which has lasted us about 3 meals a piece. We topped the soup with fresh green onions and FRESHLY foraged chantrel mushrooms! SO YUM!

    Everyday I am logging I notice that I often omit meat from my daily meals. I have constant food choices that I cycle through every week, and most of those options do not have meat. I am, However, having a hard time cutting out dairy and eggs. I find that I eat eggs and cheese everyday.

    Ive been trying to do a 40 minute walk every night this week. It has been really great for my gut health, my mental health, and has also been great for helping me get to sleep easier.

    This week I chose to shop at Trader Joe's. If you aren't familiar, their mission is "We are committed to providing our customers outstanding value in the form of the best quality products at the best everyday prices. Through our rewarding products and knowledgeable, friendly Crew Members, we have been transforming grocery shopping into a welcoming journey full of discovery and fun since 1967." Although all items aren't organic options, they offer ethically sourced foods, while also allowing organic shopping to be more affordable and easy to come by. At least one of my meals each day is coming from entirely organic food!

    Many people say that “you can’t feed the world with just organic food.” How would you respond to that statement?

    I have mixed feelings about this comment. Of course you are technically able to feed the world with organic food. That being said, it is not an easy thing to do for many reasons. Although organic is the best for our environment, it is also the most expensive option. Many families within North America are not able to afford to eat organic foods, making it out of reach for them on a regular basis.

    I find exercise is most fun while doing it with people I love! It is so fun to enjoy nature, by going on a great hike and showing friend and family the natural beauty around you!

    Why do people in richer countries eat more meat than people in other places? How does eating more meat affect our planet and other people?

    People in richer countered have more access to meats. Humans within countries with higher poverty levels often eat what they can and create meals with what is surrounding them.
