    It has been a joy participating in this with everyone. May every day be the people's eco challenge. I know I didn't do everything I wanted to, so I have my work cut out for me moving forward... Here's to little changes, every day, and big ones, too!

    I thought I'd miss the egg with fried rice, but I really didn't! Over med-high heat, saute 1 chopped onion, 2 chopped carrots and 2 chopped celery stalks in avocado oil 3-5min... add 3 cloves minced garlic and 2t minced ginger, 1min... add 1 chopped zucchini and 4oz chopped mushrooms, 5 min... add 3c cooked rice, 1/3c soy sauce, 2T rice wine vinegar.. cook until liquid absorbed... add chopped cilantro, 1/4c chopped almonds and 2 sliced scallions... serves 4

    https://www.biggestlittlefarmmovie.com ... I have 2 teenagers. They *really don't like* documentaries. Both of them sat through this entire movie. At least one of them cried. What I'm saying is: Well worth the watch.

    Weekend Win! Trader Joe's vegan shredded cheese makes for *amazing* vegan quesadillas! Roast some butternut squash, loosely smash some black beans, slice some avocado... Warm a tortilla, add "cheese" cumin and lemon, add generous portions of squash, beans and avocado, a little more cheese, and fold the tortilla in half. A little cilantro cashew creme with lemon and salt will make this binge-worthy.

    Autumn Vegan breakfast has been great this week with steel-cut oats boiled with a handful of fresh cranberries and a Granny Smith apple. A little vanilla, cinnamon and nutmeg to finish makes me feel like I'm having apple pie for breakfast - which is a relief because I really liked butter and milk in oatmeal...

    It's especially nice to be tuning in more intentionally to nature as the seasons are changing... so much to notice, so much to appreciate... so humbling to recognize the ancient intelligence expressing and unfolding anew in every moment - really makes me want to do everything possible to have that ancient intelligence UNDISRUPTED by my unconscious habits, and to bring myself and my actions (and extending outward through my example and advocacy) into harmony with this relentless loving flow of life...

      I so love that word, UNDISRUPTED! I feel that when I am interacting with nature, that sense of love, care, respect, awe and reciprocity. Not wanting my actions or habits to negatively intervene on these miraculous processes of nature that are so interconnected and in balance. Thank you for your post!

    Vegan Minestrone Soup (it makes a big batch!)
    2 potatoes, cubed 
    1t salt
    1 bay leaf
    1 large onion, chopped
    2 carrots, chopped
    1 celery stalk, chopped fine
    3T red wine vinegar
    3 cloves garlic, minced
    1 zucchini, chopped
    1 summer squash, chopped
    8oz mushrooms, chopped
    1 can diced tomatoes
    1 can kidney beans or mixed beans
    1t basil
    1/4 to 1/2 t crushed red pepper
    salt & pepper to taste (white pepper makes a nice difference!)
    1/2 lemon, juice only
    1/2 t honey (optional)

    Boil potatoes in 8c water with 1t salt and 1 bay leaf. Separately, while that's boiling, cook onion, carrot and celery for 10 minutes. Add red wine vinegar and cook off liquid. Add garlic, cook 1 minute, add other vegetables and cook 5 minutes. By now, the potatoes should be done. Add all veg to potatoes in water, add cans of tomatoes and beans, basil and red pepper. Cook 20 minutes. PULL OUT BAY LEAF!! Blend 1/2 of the soup (either with hand blender or in regular blender) and return to pot. Add lemon juice (and maybe 1/2t honey)...

    Very excited to be a part of the People's EcoChallenge and Team Shift! The depth of actions available just shows me that, while I've been careful about a lot of things for a long time, there's always more to learn, always more ways to be more sensitive to my impact... that being environmentally friendly isn't an accomplishment as much an ongoing process and one that I value and want to continue to discover and implement as a way of being!

    Let's talk about money! I think we all know that every dollar we spend votes for the kind of world we want to live in, and I think we're all really wanting more transparency from the companies we support. Well, where we keep our money has a lot to do with how our personal stewardship of money impacts the world. I've been using Aspiration Bank for a few years and am so glad. They don't fund fossil fuels, nor charge fees! (fees are optional!) They monitor my carbon footprint of my purchases, have an automatic 'round up' tree planting option.... lots of good stuff... Do you have an Eco-bank? Or maybe an eco-investment plan?
