Kristin Wildensee 10/09/2021 3:23 PMI will share a vegan recipe from my friend Linda Watson who inspires me with her vegan cooking, local shopping, growing her own food and always being willing to share food and teaching with others! This is for an avocado-lemon pasta sauce, made with cashews, avocado and lemon. Very simple yet creamy and quick to make. She also suggests tossing veggies like green beans or broccoli into the sauce and pasta, adding some chopped tomato or bell peppers and basil on top.

Kristin Wildensee 10/06/2021 8:26 PM- I see one of the Shift team challenges is to try one of the vegan recipes posted in our Feed, but I do not yet see any recipes posted. Am I looking in the wrong place? Or perhaps this is a nudge that I need to find and post a recipe of my own! :) I guess I ate a vegan meal tonight just by default...cooking veggies in olive oil with herbs and spices and served over pasta. I will do some research on more creative vegan recipes to cook and post.
