Egypt Jackson 10/18/2021 9:17 AMIncorporating vegetarian meals has been doable and fairly easy in my ecochallenge. I have not yet done a vegan meal, yet, but plan to try a vegan enchilada recipe this weekend (I would normally use chicken & dairy cheese) :) -
REFLECTION QUESTIONFood Weekly Meal PlanningAn average American throws out about 240 lbs of food per year. The average family of four in the US spends $1,500 a year on food that they throw out. Does this surprise you? Where would you rather use this money?
Egypt Jackson 10/10/2021 2:27 PMThrowing out $1,500 a year on food does not surprise me at all. I used to hate eating leftovers and would regularly throw out food. I realized how wasteful this is though and started trying to plan a little bit better with meal prepping. Obviously some foods reheat better than others. Keeping your sauces/condiments/dressings on the sides help. I would rather use the money for travel and putting into savings. -
REFLECTION QUESTIONFood Reduce Animal ProductsWhy do people in richer countries eat more meat than people in other places? How does eating more meat affect our planet and other people?
Egypt Jackson 10/09/2021 8:38 AMEating more meat requires greater land surface for agricultural needs resulting in deforestation. Animals also require fresh water sources. Animals aren't regrown/recycled in the way that crops are. Animals do not necessarily provide nutrients to the soil or environment in the way that crops can provide as well as capture carbon. -
Egypt Jackson 10/06/2021 7:18 PMI am going to try and incorporate more meatless meals into my diet. Meal prepping and planning ahead will help a lot with this!
